A process for isolation of at least one antioxidant agent from a plant substrate is disclosed which comprises a) contacting a plant substrate with an aqueous soap extraction solution comprising an aqueous medium and at least one soap compound R-C(=O)O-M+or+M-O(O=)C-R-C(=O)O-M+, wherein R is saturated or unsaturated linear, branched or cyclic C3to C17alkyl or C6to C18aryl, wherein the alkyl or aryl group can be substituted with up to 5 functional groups, and wherein M+is a monovalent cation, to obtain a soap extract and b) isolating an antioxidant mixture comprising at least one antioxidant agent from the soap extract obtained in step a).Linvention concerne un procédé disolement dau moins un agent antioxydant à partir dun substrat végétal, comprenant : a) la mise en contact dun substrat végétal avec une solution dextraction savonneuse aqueuse comprenant un milieu aqueux et au moins un composé de savon R-C(=O)O-M+ ou +M-O(O=)C-R-C(=O)O-M+, R étant un alkyle en C3 à C17 ou un aryle en C6 à C18 linéaire saturé ou insaturé, ramifié ou cyclique, le groupe alkyle ou aryle pouvant être substitué par jusquà 5 groupes fonctionnels, et M+ étant un cation monovalent, pour obtenir un extrait de savon et b) lisolement dun mélange antioxydant comprenant au moins un agent antioxydant provenant de lextrait de savon obtenu à létape a).
