PURPOSE: A jujube fermented beverage composition, and a producing method thereof are provided to offer improved taste and flavor of the composition to eaters. CONSTITUTION: A producing method of a jujube fermented beverage composition comprises the following steps: mixing injecting coriolus versicolor mycelia into 0.1-10% of jujube concentrate, and fermenting the mixture at 25-30 deg C for more than 3 days in the ph of 5-6.5 to obtain a jujube fermented solution; homogenizing the jujube fermented solution before filtering; and sterilizing the filtered jujube fermented solution. The jujube fermented beverage composition contains 10-15wt% of jujube fermented solution.본 발명은 대추 농축액에 운지버섯(Coriolusversicolor Quel) 균사체를 접종하여 발효시킨 대추 발효액을 유효성분으로 함유하는 것을 특징으로 하는 대추 발효 음료 조성물 및 그 제조방법을 개시한다.
