The present invention relates to a method for preparing cheese snacks and the cheese snacks prepared by the same. According to the present invention, the method for preparing cheese snacks comprises the steps of: preparing frozen mozzarella curd； thawing the frozen mozzarella curd and firstly subdividing the mozzarella curd； heating the firstly subdivided mozzarella curd with steam and secondarily subdividing the mozzarella cud； mixing, with additives, dough prepared by kneading the secondarily subdivided mozzarella curd in a tumbler, and preparing mixed dough by kneading a mixture of the dough and the additives； injection-molding the mixed dough to prepare mixed cheese； smoking the injection-molded mixed cheese using hickory wood to prepare mixed cheese having a smell of the hickory wood； and coating the smoked mixed cheese with mixed cream and drying the mixed cheese so as to prepare cheese snacks. According to the present invention, the mozzarella curd is thawed, subdivided, and kneaded so as to prepare string cheese, and snacks are prepared by using the string cheese. Thus, it is possible to prepare the cheese snacks having excellent storability, texture as well as taste and nutrients.본 발명은 치즈 스낵의 제조방법 및 이에 의해 제조된 치즈 스낵에 관한 것이다.본 발명에 따른 치즈 스낵의 제조방법은 냉동 모짜렐라 커드를 준비하고, 상기 냉동 모짜렐라 커드를 해동한 후 절단하여 1차 소분하며, 상기 1차 소분된 모짜렐라 커드를 스팀으로 가열한 후 2차 소분하고, 상기 2차 소분된 모짜렐라 커드를 텀블러 내에서 반죽하여 형성된 반죽물에 첨가물을 혼합한 후 치대어 혼합 반죽물을 제조하며, 상기 혼합 반죽물을 사출 성형하여 혼합 치즈를 제조하고, 상기 사출 성형된 혼합 치즈를 히코리 나무를 이용하여 훈연 처리함으로써 상기 히코리 나무 향이 흡수된 혼합 치즈를 제조하며, 상기 훈연 처리된 혼합 치즈의 표면에 혼합 크림을 도포한 후 건조하여 치즈 스낵을 제조한다.상기한 구성에 의해 본 발명은 모짜렐라 커드를 해동 소분하여 반죽하고 치대어 스트링 치즈를 제조하고 이를 이용하여 스낵을 제조함으로써, 보존성이 우수하고 조직감이 뛰어나며 맛과 영양이 우수한 치즈 스낵을 제조할 수 있다.
