PROBLEM TO BE SOLVED: To provide a method for producing a fermented malt beverage in a very short period of time compared with a conventional one without a maturing process and a stabilizing process.SOLUTION: A method for producing a fermented malt beverage includes using malt as a raw material, adding α-acetolactic acid decarboxylase and proline specific protease into a fermentation liquid in a fermentation process, and filtering after cooling the fermentation liquid immediately after the end of the fermentation process so that the time required from the end point of time of the fermentation process to the start point of time of filtration is within three days. The added amount of the α-acetolactic acid decarboxylase is 300 U/L or more, and the added amount of the proline specific protease is 0.01 U/L or more.
