PROBLEM TO BE SOLVED: To provide a xanthine oxidase inhibitor capable of being extracted from thyme of spice by a simple method.SOLUTION: Luteolin-3-β-D-glucuronide having a recognized xanthine oxidase-inhibiting activity is contained in a hot water extract obtained by immersing a dry powder of thyme in water and extracting it in a 100°C constant temperature bath over night.
