A process for hydrolysing or splitting animal or vegetable protein materials comprises (i) passing an alternating electric current through an alkaline aqueous suspension of protein material to split the protein material, (ii) separating the treated suspension into a sediment containing insoluble components of protein-containing materials and an aqueous supernatant containing dissolved products of split protein material, and (iii) isolating the split protein products from the supernatant so that the split protein molecules have defined molecular weights in the range up to 260 KDa. The splitting step (i) is carried out in a protein splitting reactor. The suspension may have 5-5-% mass of protein and a pH adjusted to 7.5-9. The splitting may be carried out at a temperature of 35-160°C and a pressure of 1-6 Bar, for a period of 5-150 minutes. The protein material may be an animal by-product, or a wheat meal. A protein splitting reactor is also claimed, comprising a cylindrical vessel 1 with inlets and outlets at respective ends, a neutral electrode 4 mechanically and electrically connected to the vessel wall, and an electrode 5 electrically isolated from the neutral electrode 4 and connected to a single phase of an electric supply.
