The present invention relates to an installation (1) for the industrial production of bakery products, pastries or the like, comprising at least one processing unit (2; 2A), such as a baking oven (2) or a deep-freeze (2A), support plates (6) and means for transporting said support plates (6) through this unit (2; 2A) from an inlet (3; 3A) to an outlet (4; 4A), characterized in that said support plates (6) comprise at least one layer of non-magnetic material (8), of the aluminium type or the like, and a layer (9) of a ferromagnetic material, and characterized in that, upstream of the inlet (3; 3A) and/or downstream of the outlet (4; 4A) of this processing unit (2; 2A), induction heating means (10; 11; 12) for said support plates (6) are provided.
