the invention relates to gelatin, protein hydrolysates and muscle of the thornback ray (raja clavata) with anti ace activity.the anti ace activity was detected in the hydrolysate. according to the present invention, the gelatin hydrolysates obtained by the enzyme preparation.subtilis a26 (hg (26) and the neutrase (hg neutrase) as well as the hydrolysate of muscle produced by the enzyme preparation from b. surries \/ is 26 (hm a26) showed the highest activities.the hydrolysates hg and hg neutrase 26 were fractionated on sephadex g-25 gel, then the most active fractions were sub fractionated by rp-hplc.27 and 30 peptides were identified by nanolc ms \/ ms in the active fractions of hg and hg neutrase 26, respectively. the identified peptides are rich in glycine and proline.the hydrolysate), 26 was then fractionated on sephadex g-25 gel filtration.the most active fractions f2 and f3 are ci5o (concentration required to inhibit 50% ace activity) of 0.42 and 0.1 mg \/ ml, respectively.131 and 108 peptides were identified by nanolc ms \/ ms in the f2 and f3, respectively. all peptides identified are derived from different proteins in muscle of fish.taking into account the molar mass of the peptides identified and the presence of some amino acids in the sequence for the anti ace activity.23 peptides were synthesized chemically to highlight their activities in vitro.the most active peptides from hydrolysates of gelatin are apgap, gipgap and mrg with the < sub > 50 < sub > are on the order of microns 170.28, 27.9 and 40.8, respectively.on the other hand, peptides derived from the same fraction exerted a synergistic by decreasing the < sub > 50.< \/ sub > the most active peptides from the hydrolysate of the muscle fqpsf and lkypi with 50\u00a0) < sub > < \/ sub > of 12.56 and 27.07 micrometers, respectively.Linvention concerne des hydrolysats protéiques de gélatine et de muscle de la raie bouclée (Raja clavata) présentant une activité anti-ECA.
