A nutrient rich food-grade defatted corn germ flour derived from a dry-milledcorngerm fraction is provided. The food-grade defatted corn germ flour producedcontainshigh levels of protein, dietary fiber, and amino acids and is low in fat.Furthermore, amethod for preparing high quality, food grade defatted corn germ flour fromdry-milledcorn germ fraction by forming collets and removing oil from said dry-milledcorn germfraction is provided. The method includes: providing a dry-milled corn germfraction;conditioning the dry-milled corn germ fraction; flaking the dry-milled corngerm fractionto increase surface area; adding water and steam to the flaked corn germfraction; formingthe flaked corn germ fraction into collets; removing oil from the collets bysolvent-extractionusing a hydrocarbon solvent; drying the de-oiled collets; and processing thede-oiledcollets in a food grade flourmill to obtain food-grade defatted corn germflour with adesired consistency. The solvent-extraction process produces a miscella, amixture of cornoil, hydrocarbon solvent, and water. The miscella may be processed through adistillationsystem to separate the corn oil, hydrocarbon solvent, and water in order torecover crudefood-grade corn oil.
