The present invention relates to a manufacturing method of color-changing rice whose color changes to a red color when cooking white rice. The present invention provides a novel technique which changes the color of rice, which is not red rice at first and exists as white rice, to red rice by applying heat when cooking the rice. An objective of the present invention is to provide novel functional rice which allows mass production at low costs, eliminates harmfulness to humans, and has an anticancer effect. Also, a main objective of the present invention is to provide color-changing rice which is white rice at first, but changes to a red color when applying heat to cook the rice. According to the present invention, the color-changing rice uses a mixed composition comprising sodium selenite, nicotinic acid amide, and pteroylglutamic acid. The color-changing rice is obtained by a process of coating ordinary white rice with the mixed composition. When the mixed composition is used to coat white rice, the rice is white at first, but the color of the rice changes to a red color when heat is applied. The color-changing rice in accordance with the present invention improves the anticancer effect and also has a high antioxidant effect.본 발명은 백미(白米)에 열을 가하여 밥을 지으면, 쌀의 색상이 적색으로 변하는 색상 변환 쌀의 제조 방법에 관한 것이다. 처음부터 적색 쌀이 아니라, 처음에는 백미로 존재하지만 열을 인가하여 밥을 지으면 쌀의 색상이 적미(赤米)로 변하는 신기술이다.본 발명이 이루고자 하는 기술적 과제는 저렴한 가격으로 양산이 가능하며, 인체에 유해성이 없으며 항암효과를 지닌 새로운 기능성 쌀을 제공하는데 있다. 또한, 처음에는 백미(白米)이지만 열을 인가하여 밥을 지으면 색상이 붉은 색으로 변하는 색상변환 쌀을 제공하는데 그 주된 목적이 있다.본 발명에 의한 색상 변환 쌀은 "아셀렌산나트륨(Sodium selenite), 니코틴산아미드(Nicotinic acid amide), 프테로일글루탐산(Pteroylglutamic acid)"으로 구성되어진 혼합조성물을 활용하도록 한다. 색상 변환 쌀은 일반 백미에 본 발명에 의한 혼합조성물을 코팅하는 과정으로 이루어 진다.상술한 혼합조성물을 사용하여 백미(白米)를 코팅할 경우, 처음에는 백미(白米)이지만 열을 인가하여 밥을 지으면 쌀의 색상이 백색(白色)에서 적색(赤色)으로 변화하게 된다. 본 발명에 의한 색상 변환 쌀은 항암효과가 증대되며, 높은 항산화효과도 아울러 지니고 있다.
