A process of producing pickled sea cucumber (Holothuroidea) comprising the steps of: washing the sea cucumber with running water, boiling 1/2 kilo of washed sea cucumber until tender, cutting into strips or square, preparing pickling solution by mixing 1 cup vinegar, 1 cup sugar, 1 teaspoon salt, simmering the pickling solution, packing the sea cucumber, carrots, and raisins into the sterilized jar, pouring the hot pickling solution into the packed sea cucumber in the sterilized jar, pasteurizing the packed sea cucumber for 5-10 minutes, cooling the packed sea cucumber in the sterilized jar, and sealing the packed pickled sea cucumber in the sterilized jar.
