The invention relates to an installation meant to dehydrate the vegetal products (medicinal and aromatic herbs, vegetables and fruits) for reducing the natural water content up to reaching a level which prevents the activity of microorganisms, without destroying the tissues or depreciating the value of the pharmaceutical and aromatic compounds of the products to be dehydrated.
