The disclosure relates to an antioxidant composition comprising a galactolipid, ascorbic acid and/or a derivative thereof, and at least one further lipid for use in food products for protecting it against oxidation. Further aspects of the invention are the method of manufacturing such an antioxidant composition as well as the use of galactolipids in combination with ascorbic acid and/or a derivative thereof for protecting a composition against oxidation. Particularly, the disclosure relates to the use of a galactolipid in combination with ascorbic acid and/or a derivative thereof (preferably ascorbyl palmitate) for protecting a composition against oxidation to be used in food products to prolong the stability and quality of oxidation sensitive oils over a longer period of time thereby prolonging their shelf-life without the appearance of primary and secondary oxidation products.
