Dried pasta in the form of a tortiglione, i.e. shaped as a hollow cylindrical tube, having an outer diameter of between 8 and 14 mm and having on its outer surface a plurality of ridges or ribs oriented in the manner of a helix with an angle of inclination of between 40° and 58°； these tortiglioni have organoleptic and structural characteristics, in particular a consistency or texture, superior to those of conventional tortiglioni which have ridges or ribs oriented in the manner of a helix with an angle of inclination of about 35°.Una pasta seca en la forma de tortiglione, i.e., conformada como un tubo cilíndrico hueco, que tiene un diámetro exterior de entre 8 y 14 mm y que tiene sobre su superficie exterior una pluralidad de rebordes (1', 1") o salientes orientadas en la forma de una hélice con un ángulo de inclinación de entre 40° y 58°, estas tortiglioni tienen características organolépticas y estructurales, en particular una consistencia o textura, superiores a las de las tortiglioni convencionales que tienen rebordes o salientes orientadas en la forma de una hélice con un ángulo de inclinación de aproximadamente 35º.
