[Problem] To provide a process for manufacturing instant noodles which exhibit fresh-noodle-like flavor and mouthfeel. [Solution] The present invention is a process for manufacturing instant noodles which includes heat treatment under specific conditions of temperature and humidity, particularly, a process for manufacturing instant noodles which includes a heat treatment step wherein heat treatment is conducted at a chamber temperature of 130 to 2200C in an atmosphere having a humidity of from a level 5 pcnt lower than the absolute humidity of water vapor under atmospheric pressure at the chamber temperature to a level 10 pcnt higher than the absolute humidity of water vapor under atmospheric pressure at the chamber temperature.
