PROBLEM TO BE SOLVED: To provide a new lactic acid bacterium, and fermented compositions, pickled foods as well as food compositions obtained thereby.

SOLUTION: A new lactic acid bacterium is isolated from crucian sushi which is a Japanese traditional food and has good taste. Fermented compositions are obtained by fermentation using the lactic acid bacterium. Pickled foods are obtained by adding and fermenting the lactic acid bacterium. Further the food compositions are featured by containing a bacterial body obtained by culturing the lactic acid bacterium.
