The present invention relates to a recombinant vector comprising a MYH1 gene and to uses thereof, and specifically, to a composition for improving meat comprising the recombinant vector comprising the MYH1 gene consisting of the nucleotide sequence of SEQ ID NO: 1； and a composition for determining meat comprising an agent capable of measuring the expression level of mRNA or a protein of the MYH1 gene. Since the MYH1 gene has an effect of improving the redness of an individual, the recombinant vector containing the MYH1 gene may be used to improve the meat of a transformant. In addition, by measuring the expression level of the gene, the meat can be objectively evaluated.본 발명은 MYH1 유전자를 포함하는 재조합 벡터 및 이의 이용에 관한 것으로, 구체적으로 서열번호 1의 염기서열로 이루어진 MYH1 유전자를 포함하는 재조합 벡터를 포함하는 육질 향상용 조성물, 및 MYH1 유전자의 mRNA 또는 단백질의 발현 수준을 측정할 수 있는 제제를 포함하는 육질 판단용 조성물에 관한 것이다.상기 MYH1 유전자는 개체의 적색도를 향상시키는 효과를 나타내므로, 상기 MYH1 유전자를 포함하는 재조합 벡터는 형질전환체의 육질을 향상시키는데 이용될 수 있을 것이다. 또한, 상기 유전자의 발현 수준을 측정하면 육질을 객관적으로 평가할 수 있을 것이다.
