PROBLEM TO BE SOLVED: To provide a substance derived from natural sources, having low toxicity and high safety and exhibiting remarkable dipeptidyl peptidase IV (DPPIV) inhibiting activity.
SOLUTION: The water-soluble fraction of cheese has remarkable DDPIV inhibition activity and the activity increases with the increase of the aging period of the cheese. The water-soluble fraction of cheese contains a peptide having DDPIV inhibition activity. The DDPIV inhibiting agent depresses blood sugar level by the antagonistic action to DDPIV.
