PROBLEM TO BE SOLVED: To provide MISO ingestible in daily basis and having an excellent beautiful skin effect, and a MISO extract.SOLUTION: Provided is MISO obtained by mixing the one obtained by cooking soy beans with rice malt obtained by cooking rice and culturing a koji mold and salt and performing fermentation and aging thereto, in which the color of the MISO is 18 to 35 by the Y value of an XYZ colorimetric system. Also, the MISO extract includes &bgr；glucocerebrosidase activity.【課題】日常的に摂取可能であり、優れた美肌効果を有する味噌および味噌抽出物を提供する。【解決手段】本発明に係る味噌は、大豆を蒸煮したものに、米を蒸煮してこうじ菌を培養した米麹と、食塩とを混合して、発酵および熟成させた味噌であり、前記味噌の色がＸＹＺ表色系のＹ値で１８～３５である。また、本発明に係る味噌抽出物は、βグルコセレブロシダーゼ活性を有する。【選択図】図１
