Independent claims are included for: (1) process for industrial preparation of kebabs from plant products (fruits or vegetables) composed of series of pieces in form of naturally irregular cut of vegetable products, where these pieces are carried by a skewer, comprising cutting vegetable products into pieces and preparing the pieces ready to be skewered, separating parts from each other, positioning each piece separately and skewering pieces one by one to set the assembly constituting the kebab； and (2) installation for preparing kebab pieces of plant comprising: feeding device (300) receiving prepared pieces and comprising separator (320) receiving pieces in bulk for separating and distributor (340) receiving the separated pieces and forming a buffer to provide the pieces one after another in a controlled manner； assembly device (200) fed by pieces by the distributor and comprising assembly points (210) each equipped with a positioning body for positioning the pieces relatively centered with respect to the axis of skewering associated with assembly point and points of assembly is located on assembly path； skewering device comprising skewering body equipped with a skewer head receiving a skewer, loading post in which each skewering body receives a skewer and rotating means for circulating skewering body on the assembly path and skewering a piece with assembly points.
