Provided is a production method whereby, in a fat or oil product etc., an increase in the content of glycidol and the like of a fat or oil can be inhibited even though a deodorization step is conducted under high-temperature conditions. A method for producing a fat or oil according to the present invention is characterized in that a step for deodorizing a fat or oil is conducted under the following conditions: contacting the fat or oil with steam for 30-180 minutes at a temperature exceeding 230oC and at a degree of vacuum of 150-700 Pa in a tray of a tray-type deodorizing device and the amount of the steam being 3.0-8 mass% relative to the fat or oil in the tray.
