PROBLEM TO BE SOLVED: To provide a technique for extracting proanthocyanidin from grains, and to provide an extract of grains containing proanthocyanidin.
SOLUTION: An extract containing proanthocyanidin is obtained by extraction of grains, particularly, soy beans, and more particularly, a seed coat thereof as a raw material with an organic acid-containing aqueous solution.
