The present invention relates to: a composition containing magnesium sulfate as an active ingredient for blanching herbs； and a method for blanching herbs characterized in that herbs are added into the composition to be blanched. The composition inactivates a catalyst related to quality deterioration of the herbs. Therefore, the composition minimizes quality deterioration of the herbs, inhibits aging, alleviates low-temperature injury, and also has an sterilization effect. Accordingly, the composition enables a blanching method, widely used as a pre-treatment technology before storage of herbs, to be more effectively used. The composition can be advantageously used for researches for developing, using, and processing food.본 발명은 황산마그네슘을 유효성분으로 함유하는 나물의 블랜칭용 조성물 및 상기 조성물에 나물을 첨가하여 블랜칭하는 것을 특징으로 하는 나물의 블랜칭 방법에 관한 것으로, 본 발명에서 제공하는 나물의 블랜칭(blanching)용 조성물은 나물류의 품질저하에 관련되는 효소를 불활성화시켜 품질 변화를 최소화시키며, 노화를 억제하고 저온장애를 완화시킬 뿐만 아니라 살균효과까지 있어 나물 저장 전처리 기술로 널리 이용되고 있는 블랜칭 방법을 보다 효과적으로 이용할 수 있게 하므로, 식품 개발이나 이용 및 가공법에 대한 연구에 유용하게 이용될 수 있다.
