PROBLEM TO BE SOLVED: To provide a tantanmen soup-like separation type soup which allows a vivid contrast between the white color of ingredients such as soybean curd and the red color of red vegetable oil floating on the soup to be created at the time of eating a tantanmen-like hot pot cooking, visually stimulating appetite, with the floating oil free from stickiness.SOLUTION: The separation type soup includes an oil layer part having an L* of 50 to 80, an a* of 30 to 65, and a b* of 60 to 101 in the L*a*b* color system, and a water layer part having a turbidity of 120 ppm or more when diluted 30 times.COPYRIGHT: (C)2015,JPO&INPIT【課題】担担風鍋料理を食する際に、豆腐等の具材の白色とスープに浮遊する赤色植物油の赤色とのコントラストが鮮やかで、視覚的に食欲が刺激され、浮遊する油がべたつかない担担麺のスープ風の分離型スープを提供する。【解決手段】分離型スープにおいて、油層部がL↑*a↑*b↑*表色系におけるL↑*が50~80、a↑*が30~65、b↑*が60~101であり、且つ、水層部の30倍希釈時の濁度が120ppm以上である分離型スープとする。【選択図】なし
