PROBLEM TO BE SOLVED: To provide a method for efficiently extracting/collecting antioxidative components contained in cell walls through cutting the high molecular structure of plant cells with hydrolysis of a plant raw material under saturated vapor at heating temperature without using hot water in a subcritical water area.
SOLUTION: This method for extracting/collecting the antioxidative components contained in cell walls comprises raw material charging treatment, hydrolyzing treatment and cooling treatment. The raw material charging treatment comprises charging a plant raw material containing the antioxidative components in cell walls into a treatment chamber and sealing the treatment chamber. The hydrolyzing treatment comprises heating the plant raw material in the treatment chamber at 130-150°C, and breaking the cell walls of the plant raw material through exposing the plant raw material for a fixed time in steam atmosphere of water contained in the plant raw material, and releasing the antioxidative components contained in cell walls from cell walls followed by taking into steam containing plant cell components taken out by destruction of cell walls. The cooling treatment comprises performing hydrolyzing treatment and extracting the antioxidative components contained in steam through cooling steam in the treatment chamber.
