A method of killing bacteria. The method includes contacting the bacteria with an effective amount of at least one oxidation product of safranal selected from the group consisting of a compound of formula II, a compound of formula III, and stereoisomers thereof.The oxidation products of safranal of formula II and/or formula III are preferably synthesized by subjecting safranal to oxidation reactions either photochemically with at least one peroxide in the presence of light or thermally with at least one organic peracid.
