PROBLEM TO BE SOLVED: To reduce the ethanol concentration within a wine efficiently and stably at a low cost.SOLUTION: The provided manufacturing method of a non-alcoholic wine is a manufacturing method of a non-alcoholic wine including an ethanol adsorption and removal step of removing ethanol within a wine based on the adsorption thereof on an adsorbent material and includes, as a pretreatment of the ethanol adsorption and removal step, a pervaporation (PV) membrane treatment step of partially removing the ethanol within the wine； a manufacturing system of a non-alcoholic wine which is a manufacturing system of a non-alcoholic wine including an ethanol adsorption and removal means for removing ethanol within a wine based on the adsorption thereof on an adsorbent material and including, at a step preceding the ethanol adsorption and removal means, a pervaporation (PV) membrane treatment device for partially removing the ethanol within the wine is also provided.
