PROBLEM TO BE SOLVED: To provide a method for increasing the yield of polyphenol compounds contained in field crops.SOLUTION: The yield of polyphenol compounds as antioxidative functional ingredients contained in field crops is increased by exposing the field crops to active oxygen, for example products of ozone degradation, in an environment in which the field crops can be metabolized.
