An effervescent protein tablet for human consumption comprises (a) protein, (b) an acid, and (c) a base. The tablet is soluble in an aqueous solution and optionally contains (d) a disintegrant. The protein preferably comprises of a plant protein. Preferably the tablet comprises of pea protein and rice protein in a w/w ratio of at least 0.1:1, preferably 0.5:1 to 5:1. The acid is preferably citric acid and the base is preferably sodium bicarbonate. The disintegrant is preferably microcrystalline cellulose or carboxymethyl cellulose. The tablet preferably weighs at least 3g. The protein is preferably present at a concentration of at least 10% w/w. A method of manufacturing an effervescent protein tablet for human consumption comprising combining the ingredients (a), (b) and (c) and optionally (d). The combined ingredients are preferably wetted, moulded and dried to form the tablet. The effervescent tablet may be contacted with water to form an aqueous formulation. The tablet or aqueous formulation formed therefrom may be suitable for use in medicine, muscle repair and/or in promoting anabolic metabolism.
