The present invention relates to an extract obtained byextracting useful components containing equol from anequol-containing fermented soybean hypocotyl, and to a method forproducing the same.The present invention makes it possible to efficientlyobtain useful components containing equol from the fermentedsoybean hypocotyl by subjecting an equol-containing fermentedsoybean hypocotyl to extraction using an ethanol aqueous solutionas an extractant. The present invention reduces the content ofsaponin, which causes an unpleasant taste, by sequentiallysubjecting the equol-containing fermented soybean hypocotyl toextraction using an ethanol aqueous solution and ethanol, whileefficiently extracting equol and glycitein.
