The present invention relates to a ginger cutting device. Half cutters (40a, 40b, 40c) and a complete cutter (50) fixated on a processing head (1) cut ginger which is rotated by a ginger guide (30) and discharge the ginger to the outside. The cut ginger is not stuck to the inner wall of the processing head (1) or the ginger guide (30). Also, blades of the half cutters (40a, 40b, 40c) having same blade distance are installed separately. Therefore, the ginger is cut thinly. According to the present invention which is composed like this, the half cutters (40a, 40b) (40c) and the complete cutter (50) are fixated on a head cover (20). The ginger guide (30) rotates and moves the ginger and passes the ginger through the half cutters (40a, 40b, 40c) and the complete cutter (50). The ginger is firstly cut into strips while passing the half cutters (40a, 40b) (40c), and then the ginger is cut thinly and is discharged while passing the complete cutter (50). Even though the ginger having lots of fibers and juice is cut, the ginger is not stuck to the half cutters and the complete cutter and a ginger cutting process is executed smoothly. Also, the blade distance of the half cutter is selectively mounted as a narrow one or a wide one. Therefore, a cutting thickness is diversified.
