The present invention relates to a method for preparing wild vegetable bugak (deep-fried dish) using pretreated wild vegetables (balloon flower roots, Korean angelica, wild asters, chili peppers, thistle and mulberry leaves). The method comprises: a first step of pretreating raw materials； a second step of preparing glutinous rice paste； a third step of applying the glutinous rice paste to wild vegetables, and aging and drying the mixture； a fourth step of frying the mixture； and a fifth step of packaging the mixture and finishing a product. Accordingly, the wild vegetable bugak has improved functionality, preference of consumers and quality as a higher value-added product. 본 발명은 전(前)처리된 산채류(도라지, 당귀, 취나물, 고추, 곤드레 나물, 뽕잎)을 이용한 산채 부각을 제조하는 방법에 관한 것으로 제 1단계는 원료의 전(前)처리 단계, 제 2단계는 찹쌀 풀 제조, 제 3단계는 도포 및 숙성 건조 단계, 제 4단계는 튀김 단계, 제 5단계는 포장 및 제품 단계를 포함하여 기능성과 소비자의 기호도 및 품질을 향상시킨 고(高)부가 가치화된 산채류(도라지, 당귀, 취나물, 고추, 곤드레 나물, 뽕잎)을 이용한 산채 부각 제조방법에 관한 것이다
