The present invention relates to mugwort vinegar using fermented lactic acid, and a production method thereof. More specifically, the present invention relates to mugwort vinegar which is prepared by the following steps: preparing mugwort-added sweet rice drink which is produced by using a mugwort extract; adding monosodium L-glutamate to prepare fermented lactic acid; and carrying out alcohol fermentation and acetic acid fermentation using the fermented lactic acid. The present invention further relates to a production method thereof. According to the present invention, it is possible to produce vinegar which has high content of gamma-aminobutyric acid (GABA), ensures unique aroma of mugwort and colors of the mugwort extract, while exhibiting excellent functionality.본 발명은 젖산발효물을 이용한 쑥식초 및 그 제조방법에 관한 것으로, 보다 상세하게는 쑥추출액을 이용하여 제조된 쑥식혜에 L-글루타민산나트륨를 첨가하여 젖산 발효물을 제조하고, 이러한 젖산 발효물을 알코올발효 및 초산발효시켜 제조된 쑥식초 및 그 제조방법에 관한 것으로, 쑥 자체의 향이 잔존하고, 쑥 추출물 고유의 색을 가지고 있어 관능성이 우수하면서도 감마아미노부티르산(gamma-ammino butyric acid; GABA)의 함량이 높은 식초를 제조할 수 있다.
