The present invention provides a method for producing red koji rice, the method comprising: a first step of steaming glutinous rice; and a second step of inoculating red koji in the steamed glutinous rice, followed by culturing and culture and fermentation for 12 days or longer.본 발명은 홍국쌀 100g을 기준으로 모나콜린 K 가 3500 mg 이상인 홍국쌀의 제조방법으로서, 찹쌀을 증자하는 제1단계; 및 증자된 찹쌀에 홍국균을 접종한 후 12일 이상 배양 및 발효시키는 제2단계를 포함하는 것인 제조방법을 제공한다.
