A composition comprises honey and collagen. Preferably the composition is for use in the treatment of a wound, in particular, a burn. The collagen is preferably bovine collagen and the honey is preferably of Unique Manuka Factor (UMF) +16. Preferably the composition comprises a mixture of an aqueous honey solution and an aqueous collagen suspension where the mixture comprises about 0.05% to 5.0% honey by weight. The composition may be in the form of a thin film or scaffold. An island dressing comprising the honey and collagen composition surrounded by an additional supporting thin film is outlined. A method of producing a honey collagen composition comprising the steps of preparing a collagen suspension, preparing a honey solution, and adding the honey solution to the collagen suspension is outlined. The suspension may be subjected to further steps of: optionally degassing, and drying at low temperatures or at higher temperatures to provide a thin film; lyophilisation or freeze-drying to form a porous sponge or membrane; or physical or chemical cross-linking. The composition is preferably administered topically to the skin.
