An anchovy simmering and drying tray according to the present invention comprises: a frame； a net body which supports the edge of the frame, includes a concave-convex part formed along a length direction or a direction vertical to the length direction, and has multiple through-holes formed for drainage； and an interplot which compartmentalizes the domain of the net body into two or more sections. The anchovy simmering and drying tray according to the present invention uses a plastic material which does not discharge harmful materials, so that harmful materials are not discharged therefrom even when anchovy simmering is repeatedly performed. Moreover, the anchovy simmering and drying tray according to the present invention can prevent the gathering of anchovies when being simmered through the interplot. Both simmering and drying can be performed. The surface area that contacts anchovies to be dried is minimized through the net body having the concave-convex part having the shape of a square wave, a sine wave, and a triangle wave, so that drying efficiency is improved. By means of the interplot, anchovies to be dried can be uniformly distributed throughout the overall surfaces of the tray, so that the anchovies can be uniformly dried.본 발명에 따른 멸치 삶기 및 건조용 건조대는 프레임과； 상기 프레임에 가장자리가 지지되고, 길이방향 또는 길이방향과 직교하는 방향을 따라 요철부가 형성되며, 배수를 위한 다수의 관통공이 형성된 망체와； 상기 망체의 영역을 적어도 둘 이상의 구역으로 구획하는 구획간을 구비하는 것을 특징으로 한다.본 발명에 따른 멸치 삶기 및 건조용 건조대는 유해한 물질을 배출하지 않는 소재플라스틱을 대체함으로써 멸치를 삶기 위한 과정을 반복적으로 수행하더라도 유해물질의 배출이 없는 멸치 삶기 및 건조용 건조대를 제공할 수 있다.그리고, 본 발명에 따른 멸치 삶기 및 건조용 건조대는 구획간을 통하여 멸치를 삶을 때에 멸치가 일 측으로 몰리는 것을 방지할 수 있으며, 삶는 작업과 건조 작업을 모두 수행할 수 있으며, 구형파, 정현파, 삼각파와 같은 형상을 갖는 요철부를 구비하는 망체를 통하여 건조대상 멸치와의 접촉면적을 최소화함으로써 건조효율을 높일 수 있을 뿐만 아니라, 구획간을 구비하여 건조대상 멸치를 건조대의 전면적에 걸쳐 균일하게 분포시킬 수 있어 건조대상 멸치를 균일하게 건조시킬 수 있다.
