The invention relates to a method for producing a capsule filled with coffee, comprising the steps of collecting green coffee beans, roasting the beans, subjecting the beans to air, grinding the beans, degassing the beans and packaging the ground coffee in a hermetically sealed capsule with a bottom wall configured to move towards the outside of the capsule to be perforated by perforation spikes of a second perforating plate when a certain water pressure is attained in the capsule, and with a top wall configured to be perforated by perforation spikes of a first perforating plate. The invention further relates to a coffee machine suitable to handle capsules produced with said method and in combination the coffee machine and the produced capsule.
