The present invention relates to a method of cultivating a coffee tree using a red ginseng extract and, more specifically, relates to a method of cultivating a coffee tree by using a red ginseng extract through an environmentally friendly and rest time process having an artificial rest time； and a beverage composition and a food additive produced by the method. In order to solve the above technical problem, a method of cultivating the coffee tree using the red ginseng extract in accordance with the present invention comprises: a step of supplying an aqueous solution of a red ginseng extract to a coffee seed； and a step of adjusting a moisture content of soil in which a coffee seed is planted. According to the present invention, the method of cultivating the coffee tree using the red ginseng extract may have an effect of enhancing immunity of the coffee tree without using at all a chemical fertilizer to prevent an outbreak of infectious diseases and pests； have an effect of increasing germination percentage of the coffee seed and a production yield of a coffee berry； and have an effect of allowing the coffee berry containing ginsenoside having high absorption rate as an effective ingredient to be harvested. The present invention also has an effect of providing a beverage composition and a food additive including a coffee berry extract containing ginsenoside having a high absorption rate as an effective ingredient.본 발명은 커피나무의 재배방법에 관한 것으로, 보다 구체적으로는 홍삼 추출물을 이용하여 친환경적이며, 인위적인 휴지기인 휴면(休眠) 공정을 통한 커피나무의 재배방법 및 그 재배방법으로 생산된 음료 조성물 및 식품 첨가제에 관한 것이다. 상기한 기술적 과제를 해결하기 위하여, 본 발명의 홍삼 추출물을 이용한 커피나무의 재배방법은, 커피 씨앗에 홍삼 추출물 수용액을 공급하는 단계 및 커피 씨앗이 심어진 토양의 수분량을 조절하는 단계를 포함한다. 본 발명에 따른 홍삼 추출물을 이용한 커피나무의 재배방법은, 화학비료를 전혀 사용하지 않고 커피나무의 면역력을 높여 전염병 및 해충 출현을 예방하고, 커피 씨앗의 발아율 및 커피열매의 수확량을 높이며, 체내 흡수율이 높은 진세노사이드를 유효 성분으로 하는 커피열매를 수확할 수 있도록 하는 효과를 가질 수 있다. 또한 체내 흡수율이 높은 진세노사이드가 함유되어 있는 커피열매 추출물을 유효 성분으로 포함하고 있는 음료 조성물 및 식품 첨가제를 제공하는 효과를 가질 수 있다.
