PURPOSE: A manufacturing method of bean sprouts extract to greatly enhance an extraction yield and maintain an active ingredient without destroying the active ingredient through a bean sprout process. CONSTITUTION: A manufacturing method of bean sprouts extract comprises a step of obtaining air-dried bean sprout by air-drying bean sprout at 50-57°;C; and a step of obtaining hot water extract solution by adding 100-1500 weight of hot water and about 100 weight air-dried bean sprouts to proceed with the hot water extraction. A hot-air drying performs for 5-20 hours. A moisture content of hot-air dried bean sprout is 7 weight% or less. An additional step of bean sprout sugar coating is performed before a step of obtaining the bean sprouts. Sugar content is an oligosaccharide or a starch syrup. A sugar coating dips in a sugar solution which includes 30-70 weight% of water for 3 minutes to 3 hours at 20-35°;C. Hot water extraction extracts for 2-10 hours at 70-100°;C. Sugar concentration of hot water extract solution is 5-20 brix. A manufacturing method of bean sprouts extract adds a step of obtaining concentrate by concentrating hot water extract solution. Sugar content of concentrate is 40-50 brix in a step of obtaining the concentrate. A manufacturing method of bean extraction adds a step of obtaining dry powder of bean sprout using one from hot wind drying, drum drying and freeze drying. A moisture content of bean sprouts dry powder is 3 % or less.본 발명은 콩나물 추출물의 제조방법에 관한 것으로서 더욱 상세하게는 콩나물을 열풍건조하고, 건조된 콩나물을 열수추출함으로써 콩나물의 유효성분을 최대화할 수 있는 콩나물 추출물의 제조방법에 관한 것이다.
