The present invention relates to a method for manufacturing perennial root vegetables with residual agricultural chemical component neutralized or removed therefrom and enhanced germanium component, and the perennial root vegetables manufactured thereby. According to the manufacturing method of the present invention, perennial root vegetables, in which harmful residual agricultural chemical components are effectively removed and the amount of germanium components can be greatly enhanced, can be mass-produced.
