Provided is a green tea extract usable as an additive or food product ingredient, having high catechin content and a favorable green color conveying freshness and high quality. The green tea extract has an X value of 7-30, a Y value of 8-34, and a Z value of 4-15 in the XYZ color space measured by a spectroscopic color difference meter, and a total catechin content of at least 30 wt. %. Green tea leaves are extracted using a first aqueous organic solvent, then extracted using a second aqueous organic solvent, and the extracts contained in the obtained extract liquid are combined and collected. Assuming the organic solvent concentration of the first aqueous organic solvent is P [%, volume/volume], and the organic solvent concentration of the second aqueous organic solvent is Q [%, volume/volume], then P and Q satisfy the following expression. 20=P=90, 80=Q, and 9980=(33P+100Q)
