PROBLEM TO BE SOLVED: To provide a freezing method and a freezer preventing deformation and cracks of an object to be cooled when freezing various objects to be cooled, such as biological tissues, various materials and processed products, and perishable food, preventing as much as possible breakage of tissues and cells originally included in an object to be cooled, and capable of freezing without lowering productivity and energy efficiency than before.SOLUTION: In cooling and freezing treatment of an object to be cooled, the object to be cooled is supplied to cooling and freezing treatment by dividing a cooling step into a plurality of steps, and setting a cooling temperature (first cold air temperature) used in an initial stage cooling step in each of the cooling steps is set higher than a cooling temperature (second cold air temperature) used at least in the cooling step thereafter.【課題】生物組織、種々の素材や加工品並びに生鮮食料品等、種々の被冷却物の冷凍に際し、これら被冷却物の変形や割れを防止するとともに被冷却物に本来備わる組織や細胞等の破壊を極力防止し、かつ従来よりも生産性及びエネルギー効率を低下させることなく冷凍できるようにした冷凍方法及び冷凍装置を提供する。【解決手段】被冷却物の冷却凍結処理において、冷却工程を複数工程に分けるとともに、各冷却工程における初期段階の冷却工程で使用される冷却温度（第１冷風温度）が、少なくともそれ以降の冷却工程で使用される冷却温度（第２冷風温度）よりも高い温度に設定されて冷却凍結処理に供される。【選択図】図２
