The invention relates to a process for preparing bakery yeast. According to the invention, the process comprises the stages of molasses preparation by diluting it up to 40% useful substance, pH correction to 4.5...5 with sulphuric acid, sterilization by steam injection and settling clarification, multiplication of the yeast culture in 2...3 development stages for biomass accumulation, separation of suspension from yeast, washing the cells in centrifugal separators and concentration of biomass by filtration with rotary filters under vacuum, followed by mixing and packaging the yeast as a final product.Invenţia se referă la un procedeu de obţinere a drojdiei de panificaţie. Procedeul conform invenţiei cuprinde fazele de pregătire a melasei pentru prelucrare prin diluare la 40% substanţă utilă, corecţiaH-ului la 4,5...5 cu acid sulfuric, sterilizare prin injectare de abur şi limpezire prin decantare, multiplicarea culturii de drojdie în 2...3 trepte de dezvoltare, pentru acumularea de biomasă, separarea suspensiei de drojdie, spălarea celulelor cu separatoare centrifugale şi concentrarea biomasei prin filtrare cu filtre rotative sub vid, urmată de malaxarea şi ambalarea drojdiei ca produs finit.
