The present invention relates to a process for obtaining a precipitate rich in mannose-oligosaccharides (MOS) from coffee, the method comprising the steps of: (i) providing a MOS-containing hydrolysate derived from a coffee extraction residue material (ιi) contacting the MOS-containing hydrolysate with an organic solvent to form a suspension and (iii) recovering a precipitate.Cette invention concerne un procédé permettant dobtenir un précipité riche en manno-oligosaccharides (MOS) à partir du café, le procédé consistant à : (i) fournir un hydrolysat contenant des MOS qui est dérivé dune matière de résidus dextraction du café (ii) mettre en contact lhydrolysat contenant les MOS avec un solvant organique pour obtenir une suspension et (iii) récupérer un précipité.
