The invention relates to a method for identifying and producing in fish microbiological strains with immunostimulant capability for protection against pathogenic micro-organisms, comprising the steps of: isolating the microorganisms from the digestive tract of healthy hosts; genetically characterising the isolated micro-organisms; characterising the complementary beneficial properties; identifying immunostimulant capability in axenic models; and producing the probiotics.
