The invention relates to a method for identifying and producing in fish microbiological strains with immunostimulant capability for protection against pathogenic micro-organisms, comprising the steps of: isolating the microorganisms from the digestive tract of healthy hosts； genetically characterising the isolated micro-organisms； characterising the complementary beneficial properties； identifying immunostimulant capability in axenic models； and producing the probiotics.
