PROBLEM TO BE SOLVED: To provide a new fat imparted with a flavor, particularly, a new fat capable of being imparted with a coffee taste.SOLUTION: Without using un-extracted coffee beans, an extraction residue, particularly, a coffee extraction residue including a fixed water content is immersed into the fat as the object, heating treatment is performed at 60 to below 120°C for 60 to 180 min under the pressure reduction conditions in a vacuum degree of 30 to 100 mmHg, and thereafter, precipitates are removed to obtain a fat.
