PROBLEM TO BE SOLVED: To provide a method for enriching mushrooms especially Flammulia velutipes with &gamma-aminobutyric acid (GABA), a food raw material containing a high content of the GABA by using the F. velutipes produced by the method and a foodstuff enriched with the GABA by adding the food raw material.SOLUTION: (1) This method for producing the mushrooms containing much GABA is constituted by placing the fruit bodies of raw mushrooms (especially F. velutipes) under an anaerobic condition, and converting the part of glutamic acid contained in the mushrooms to the GABA. (2) The anaerobic conditions are formed by means such that (a) the mushrooms are placed in a hermetically closed container or a highly air-tight bag to make a vacuum state, (b) the mushrooms are placed in the hermetically closed container or the highly air-tight bag and a gas almost not containing oxygen such as a high purity nitrogen gas, carbon dioxide gas or the like is filled, and (c) the mushrooms and an oxygen scavenger are placed in the hermetically closed container or highly air-tight bag, etc.COPYRIGHT: (C)2009,JPO&INPIT【課題】きのこ類、特にエノキタケにγ-アミノ酪酸(GABA)を富化するための方法、及びこの方法によって製造されたエノキタケを用いたGABA高含有量食品素材、及びこの食品素材を添加してGABAを強化した食品の提供【解決手段】(1)生のキノコ(特にエノキタケ)の子実体を嫌気性条件下に置き、キノコに含まれるグルタミン酸の一部をGABAに変換するGABAを多量に含むキノコの製造方法。(2)嫌気条件は、(イ)密閉容器や気密性の高い袋に入れて真空状態にする、(ロ)密閉容器や気密性の高い袋にキノコと高純度の窒素ガスや二酸化炭素ガス等のほとんど酸素が含まれないガスを充填する、(ハ)密閉容器や気密性の高い袋にキノコと脱酸素剤を入れる、等の手段を用いてつくる。【選択図】 図1
