The present invention relates to fermented salt containing gamma amino butyric acid (GABA) and a manufacturing method thereof, and more specifically, to fermented salt containing GABA which is useful to a human body among components of salt, and a manufacturing method thereof. According to the present invention, the method comprises the following steps: (a) inoculating lactobacillus in a medium including glutamate, and propagating and cultivating the lactobacillus (b) adding salt to the medium in which the lactobacillus is cultivated and then performing cultivation again (c) filtering the re-cultivated medium and (d) drying filtered cultivated liquid to recovery the salt. According to the present invention, the fermented salt contains the GABA which is useful to a human body and including various bioactivities, so as to be useful to prevention of a representative adult disease like high blood pressure.COPYRIGHT KIPO 2017본 발명은 GABA가 함유된 발효소금 및 이의 제조방법에 관한 것으로, 더욱 상세하게는 소금의 성분중 인체에 유용한 GABA를 함유한 발효소금 및 이의 제조방법에 관한 것이다.본 발명에 따른 GABA를 함유한 발효소금의 제조방법은 (a) 글루타메이트를 포함하는 배지에 유산균을 접종하고, 증식 배양시키는 단계 (b) 유산균이 배양된 배지에 소금을 첨가한 후, 재 배양시키는 단계 (c) 재 배양된 배지를 여과시키는 단계 및 (d) 여과된 배양액을 건조시켜 소금을 회수하는 단계를 포함한다.본 발명에 따른 발효소금은 인체에 유용하며 다양한 생리활성을 갖는 GABA를 포함하고 있으므로, 고혈압과 같은 대표적인 성인병 예방에 유용하다.
