PROBLEM TO BE SOLVED: To provide a production method of microcapsules, with which an organic compound being an active ingredient of a fragrance material etc. can be held for a long period of time.SOLUTION: A production method of microcapsules has: a step (1) of emulsifying an organic phase, which includes one or more organic compounds and a tetraalkoxysilane in an aqueous phase including a surfactant, in which an amount of the tetraalkoxysilane is 10 to 60 mass% based on the organic compounds, and to conduct a sol-gel reaction in an acidic condition so as to form capsules, each of which having a core and a first shell； and a step of additionally adding the tetraalkoxysilane to an aqueous dispersion containing the capsules obtained in the step (1), and conducting a sol-gel reaction by keeping an initial pH of the sol-gel reaction of the step (2) lower than an initial pH of the sol-gel reaction of the step (1) so as to form capsules, each of which has a second shell enclosing the first shell.【課題】香料等の有効成分である有機化合物を長期間保持することができるマイクロカプセルの製造方法を提供する。【解決手段】界面活性剤を含む水相中に、１種以上の有機化合物とテトラアルコキシシランを含み、テトラアルコキシシランの量が、有機化合物に対して１０質量％以上６０質量％以下である有機相を乳化し、酸性条件下でゾル－ゲル反応を行い、コアと第一シェルとを有するカプセルを形成する工程（１）、及び工程（１）で得られたカプセルを含有する水分散体に、更にテトラアルコキシシランを添加し、工程（２）のゾル－ゲル反応の初期ｐＨを、工程（１）のゾル－ゲル反応の初期ｐＨより低く維持して、ゾル－ゲル反応を行い、第一シェルを包接する第二シェルを有するカプセルを形成する工程、を有するマイクロカプセルの製造方法。【選択図】なし
