A method for producing a soy protein product having a soy protein content of at least 60% by weight (N x 6.25), based on dry weight, comprising: (a) extracting a source of Soy protein with an aqueous solution of calcium chloride to cause solubilization of soy protein from the source of protein and form an aqueous solution of soy protein, (b) separate the aqueous solution of soy protein from the source Residual soy protein, (c) concentrate the aqueous soy protein solution, while maintaining practically constant ionic strength when using a selective membrane technique, (d) optionally diafiltering the concentrated soy protein solution, and (e) (i) dry the concentrated and optionally diafiltered soy protein solution, or (e) (ii) dilute the concentrated soy protein solution in water to cause a precipitate to form, separating the precipitate. tado dilution water, called the supernatant, and dry the precipitate separated from soy protein, or (e) (iii) dilute the concentrated solution of soy protein in water to cause the formation of a precipitate, acidify the precipitate mixture and dilute with water to resolubilize the protein and form a clear solution of soy protein, concentrate the clear solution of acidified soy protein while maintaining the substantially constant ionic strength by using a selective membrane technique, optionally diafiltering the concentrated solution of clear acidified soy protein and drying the concentrated solution of clear acidified soy protein optionally diafiltered, wherein, when step (e) (ii) is carried out, the concentrated solution of optionally diafiltered soy protein is acidified at a pH of 2.5 to 4.4, preferably 2.0 to 4.0, before dilution, separation and drying.Un método para producir un producto de proteína de soja que tiene un contenido de proteína de soja de al menos el 60% en peso (N x 6,25), con base en peso seco, que comprende: (a) extraer una fuente de proteína de soja con una solución acuosa de cloruro de calcio para provocar la so
